На сегодняшний день продовольственный рынок большей степени отражает потребительский спрос на продукты здорового питания. Наглядный пример этой тенденции можно увидеть в так называемом растительном молоке, которое в основном готовится из орехов и зерновых культур и имеет долгую историю как в восточной, так и в западной культурах. Продажи растительного молока и других немолочных продуктов в Европе увеличиваются более чем на 20% в год. Использование местного растительного сырья Казахстана в технологии производства зерновых напитков является актуальным и перспективным направлением в пищевой промышленности. В Казахстане зерновые культуры производятся в больших объемах, но отсутствует производство напитков на основе растительного сырья, хотя производство растительного молока уже широко распространено во всем мире. В статье представлены результаты исследования биологической ценности напитка из овса, обогащенного Омега-3 ПНЖК. В ходе исследования был проведен сравнительный анализ между обогащенным и необогащенными напитками из овса.</p></abstract><trans-abstract xml:lang="en"><p>One of the most important factors that has a significant impact on the health of the population of the Republic of Kazakhstan is a violation of the diet, due to insufficient consumption of high-grade proteins, vitamins, macro- and microelements and their irrational ratio. Today, the food market increasingly reflects consumer demand for health. A clear example of this trend can be called vegetable milk, vegetable milk is prepared mainly from nuts and cereals. In Europe, sales of plant - based milk and other dairy-free products grow by more than 20% per year. The use of local vegetable raw materials of Kazakhstan in the technology of production of grain drinks is an actual and promising direction in the food industry. In Kazakhstan, cereals are produced in large quantities, but there is no production of plant-based beverages, although the production of plant-based milk is already widespread throughout the world. The article presents the results of a study of the biological value of an oat drink enriched with Omega-3 PUFAs.
